i had promised one of my dear blogger friend to make her cheesecake.... it was months ago, but still i don't feel like baking cheesecake at that time bcz i din go shopping at the hypermarket Ashan... which means i don have the ingredients wt me... it's not hard to find them at nearby foodstore thou but in term of buying food stuff, i am keen to get the cheapest... bcz here in moscow prices vary among the supermarket, foodstore and hypermarket.... and i can get the best brand at a very low price only in Ashan hypermarket...
and the real truth is it's been ages since i last baking cheesecake... my first trial was for Huns 20th birthday party.... i made it secretly bcz i wanted to give him a surprise... i actually love to party... i love cooking, i love serving pple my food and i love to see happy faces in a party.... and i took the honor to organize him the party since he never had one b4...
i knew he was incredibly shocked when a bunch of people suddenly turned up in the middle of night.... i made a surreptious plan wt my frens and it worked!!! i still can remember he was actually not feeling well that day, he had sum kind of ache at the upper chest, but that didn't spoil his mood to enjoy the party... and the not best part was i didn't buy him any present... i was looking for it but afraid he might not like the thing i buy, hehe... so sowie dear.... but i did try my best to draw his potrait as a gift, which was actually a real crap... nevertheless, he still keep the potrait only that my drawing was too ugly to be framed...
it's quite late now, so i just wanna share my recipe with u all... and i'm hoping there will be somebody gonna give it a try and enjoy my yummielicious cheesy cheesecake....
- 1 1/2 cup cracker crumbs ( or marie biscuits )
- 2 tblsp. butter, softened
- 2 tblsp castor sugar
- 250 g cream cheese, at room temperature
- 220 g sour cream, at room temperature
- 1 can (250g) condensed milk, at room temperature
- 3 eggs
- 2 tsp lemon juice (optional)
- for the crust.....combine the biscuits, butter and castor sugar with your hand in a bowl, and flatten them out on the bottom of the springform pan. Freeze ur crust for 30 minutes. (u can always put more sugar if u desire a sweeter base)
- preheat the oven to 170-175 degrees C.
- in a mixing bowl, beat cream cheese until smooth and beat in later the condensed milk until well combined. Pour in the sour cream, add in the eggs and continue to beat until very smooth.
- pour in the mixture onto the crust, and bake them for 40-50minutes...
- run a knife at the peripheral, and ur cake will no longer stick at the edge of the pan, this really help to prevent cracking. Let stand cool in the oven, wt the door ajar... cover ur cake and refrigerate to cool overnight...
and for the sauce, i simply bring the wild berries from a frozen packet to simmer, and add in 2 1/2 tblsp. of sugar and about 1-2 tsp. cornflour.... stir until u get the rite thickness of the sauce.. can add more cornflour if u still need it!!
... i baked it last nite and during breakfast this morning, i had 1 big slice of this mouth-watering cheesecake... and rite now, only 1/8 left.... i gave away few slices to my dear fwen... they said it was really good, so i decided to just stick on this recipe for the next time.... I am SOOO gonna make like six of these and leave them in the fridge so I can have like one everyday for the whole month!!!!

it's good to have pple around and spend sumtimes together, thou a bit tiring to prepare all the fod but the joy when they eat and love our food is priceless....
