Occay, just to make it easy for me and for anyone who wish to make their own tiramisu cake from scratch, i simply write down here the recipe....
COFFEE CHIFFON CAKE
Ingredients :
(A)
- 4 egg yolks,
- 1/2 cup water (110ml),
- 85 ml vegetable oil,
- 1/4 tsp salt ,
- 100 g sugar,
- 150 g flour,
- 1 teaspoon baking powder
- 2tsp nescafe GOLD
(B)
- 4 egg whites
- 90 g sugar
- 1/6 teaspoon cream of Tartar
- whisk egg yolks, sugar and vegetable oil in the mixing bowl, add in the remaining (A) ingredients into the bowl, and continue mix till smooth.
- In another clean dry bowl, whisk the egg whites till soft peaks appear. Add sugar and cream of tartar and continue to whip till stiff
- Mix (B) into (A) and fold them together until well combined. Bake at 175 C for 40-45 minutes. Immediately invert it after removal from oven. Leave to cool on a wire rack, and when it is cold, remove from mould.
TIRAMISU CREAM
INGREDIENTS
6 egg yolks
1 1/4 cup white sugar
2/3 cup fresh milk/cream
1 1/4 cups heavy cream
1/2 teaspoon vanilla extract
450 gram mascarpone cheese
2-3 tsp sifted Nescafe GOLD,
1 cup strong brewed coffee, room temperature (2-3 tsp Nescafe GOLD + 2 tsp sugar + water)
unsweetened cocoa powder
DIRECTIONS
In a medium saucepan, whisk together egg yolks and sugar until well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixture boils. Boil gently for 1 minute, until stiffen.... remove from heat and allow to cool slightly. Cover tightly and chill in refrigerator 1 hour.
In a medium bowl, beat heavy cream with vanilla until stiff peaks form (i added in 1 sachet of so called "zagustitel" to aid in stiffing the whipped cream, i dunno in other places what they call this thing, zagustitel is russian word) . Whisk mascarpone into the whipped cream, later add in the yolks and beat until smooth. sift coffee into the mixture and well combine it... if the cream slightly runny, the trick is to add some amount of powdered sugar because it acts like a thickening agent too... if it still doesn't help, then i am so sorry because i got it all rite...
In a cup, combine 3 tblsp coffee, 2 tsp sugar with a cup of water to get a strong brewed coffee mixture...
Cut the sponge cake into 4 layers.... brush generous amount of coffee mixture onto each layer up and downside, spread tiramisu cream, and repeat layers... dust the top layer of cream with cocoa powder to finish the cake... Cover and chill overnight, until set.
NOTE: it's highly recommended to cut your cake into layers, and to cut the finished one into slices using thread... otherwise it'll be just a mess thou the taste is freaking heaven...
